    * Cheese Flavor: Nutty, bitey with sheep milk taste
    * Meltiness: Great melt and stretch
    * Overall: 9/10 a slightly picante cheese with some nutty flavors. Great on grilled cheese or on a charcuterie board

    There was an awesome restaurant in Los Angeles called Animal until pretty recently and they did a kind of fondue with this cheese with chorizo and caramelised onions served with toasted baguette, it was wonderful.

    *Ewe* gotta be careful with these delicious sheep cheeses — they’re delicious but expensive. I know the type and the region. It really is a beautiful area with lush greenery because they’re close to the coast and there are plenty of mountains up that way also.
