Anyone watch this channel?

This particular video he does a brisket smoke using the dojoe pizza accessory and complicated setup inside and keeps adding wood and spraying. Seems overly complicated for what can be a set and forget then wrap at end type of cook. Anyone get dramatically good results doing this ?

    I liked his earlier videos when I started but it’s getting out of hand. Think he’s just doing it for the content now.

    The early ones are great for new KJ owners, but when being a YouTube personality becomes a main job is when the stupid shit gets produced.

    SDBBQ has golden nuggets of knowledge but they get buried by him over talking everything. If he could keep his videos in the 7-10min range, I think he would do much better.

    I like his basic videos and processes. I have a kamado, but not a KJ, and his videos were key in getting high quality repeatable results, and especially in understanding what is going on inside a kamado and how to control it.

    I don’t think he makes videos like the one you linked as a suggested process, but more as an experiment to see what effect a setup has on the process and results.

    The results of the above video highlight a deficiency of kamados vs offsets for smoking: kamados have low airflow, which is great for efficiency but not as great for smoking.

    However, we can run a hotter fire in kamados with less efficiency and get better quality results with additional deflectors (double indirect method he refers to).

    I appreciate that he tries to understand exactly what happens and what results it produces.

    I found his early videos really useful when I first got my KJ3, lots of great advice for beginners. Lately he seems to be just adding complications to the process of cooking
