Do you love pasta as much as Pop Jones does? I think he could eat pasta 5 times a week. I decided to try my hand at making some stuffed shells. I can’t find the jumbo shells in my grocery store each time I go, so when I saw them, I knew I had to make them. I even have an extra pan in my freezer for dinner another night. Serve with garlic bread and a side salad and you have a full meal.
Enjoy!

1 lb ground chuck *
1 med onion, diced
1 Tbsp garlic, minced
15 oz Ricotta Cheese
1 egg
1/4 cup parmesan, grated
1 lb large pasta shells
1 jar pasta sauce
mozzarella cheese, sliced
Boil pasta shells in salted water for 9 minutes. Drain and cool.
Preheat the oven to 350 degrees. In a large skillet, brown ground chuck, onion, and garlic. Drain and cool. In a medium bowl, stir together ricotta cheese, egg, and parmesan cheese. Fold in 1 cup of ground chuck mixture. Using an 8X8 or a 9X13 baking dish, spread a small amount of pasta sauce on the bottom of the dish. Stuff pasta shells with ricotta mixture and lay in the dish, continue to stuff shells until the dish is full. Drizzle a small amount of pasta sauce on top of the stuffed shells. Sprinkle a small amount more of parmesan cheese on pasta sauce. Lay sliced mozzarella cheese over stuffed shells. Cover with foil and bake for 30 minutes.
*optional meat choices: breakfast sausage, italian sausage
*Spinach is a great addition to this stuffed pasta as well
** seasoning options for ricotta cheese: basil, italian seasoning, crushed red peppers

I do not like ricotta cheese. Any substitution suggestions?

Scooped and measured foods or dicing foods, freezing them and then putting them in a Ziploc bag is what I do: bell pepper, celery, green onion, diced, for example.
I even sliced meat into cubes and did the same.
This helps me cook for one person or two persons and so on !
๐ yummy !
Yummy I can almost taste these, they look delicious ๐
Looks amazing! Thank you for sharing this recipe! I can't wait to try it ๐
Karen Iโm so glad that Momma Mel sent me to you โค. And I love your kitty at the end. You made me smile. Of course Iโm going to make your stuffed shells. Havenโt made them in years. Now you put it back in my rotation.
Hey Miss Karen & Pop…I love pasta dishes too…this looks pretty easy to make…and Pop's food clock was going off.. ha!
Ya'll have a good evening!
Stuffed shells are one of our favorites. I make mine just a little different. I use only 1/4 – 1/2 pound of ground sirloin in my sauce, and the shells have the ricotta, parmesan, mozzarella and an egg. Sometimes I put in chopped spinach if my husband won't be home (he won't eat it if it has spinach in it). I layer sauce, the shells, sauce on top, and top with the mozzarella. Bake for 30 mins at 350, then the last 5 minutes I put the broiler on (keeping pan in the same location, I don't move it up under the broiler) to get bubbly and crispy on top. Yummmmmm. it's actually on the menu for this week. ๐ I love your casserole dish, the design is so pretty. Where did you get it? I also love the colors in your shirt, so watercolor-ish. So pretty.
They are a big hit here, also. Delicious!
Hi Darlin!
That looked really yummy. If i make it I'll probably sprinkle green onion on top.
What a beautiful top you are wearing in this video. Just lovely!
My mother made wonderful stuffed shells. What a great meal with a green salad.
Yummy, I haven't made stuffed shells in ages, and you have motivated me to make some. Thanks for sharing your recipes, Karen. ๐โฅ๏ธ

Having never tried Ricotta Cheese, how does it differ from Cottage Cheese ? I love most cheeses and so I'll have to try it one day. My wife is not a great fan of any cheese and so it's left to me to eat the lot !!!!!!!!! Dave and Sophie xxx
Yโall. Are such a sweet couple.
