Wrong Dude, very wrong…you made wrong the most important step…: By the time you put the eggs and the cheese together, THEN you have to mix them together , whisking them together very well and one tip-add 2-3 spoons of baking soda: the carbon dioxide will turn the fat of the cheese into cream, and the overall result will be best-> the you add in there the pasta with the bacon, and so you have the BEST result

  4. I love a good carbonara, and that looked REALLY good! I do like to add mushrooms to mine. They aren't for everyone though. I'm definitely trying your recipe!

  5. 1952 was the first written carbonara recipe in a cook book, but that does NOT mean it is when the dish was "FORMED" (1:01). No carbonara is not from Chicago.
    For example, carbonara was also mentioned in an Italian movie in 1951, and in La Stampa news paper in 1950.

  8. that is a proper carbonara and also a proper way to reheat cabonara. Absolutely one of my favorite Italian dishes. And this is a very freezer-friendly meal because you can always freeze the cheeses (because they're hard) and the raw pancetta.

  9. i thought Guanciale was the meat, it's a beef cheek, that's what the Italians say… and no cream… just egg yolks and pasta water and cheese for the creaminess… so the 'experts' say lol
