The miso broth is loosely based on the recipe from the cookbook Japan, by Hachisu. The smoky brisket compliments everything perfectly. Also in the ramen are sesame and soy marinated mushrooms, sautéed kale seasoned with mirin and rice vinegar, garlic chips and garnish of scallion.
