Breakfast was definitely my favorite meal from this week. This was my first time making creamy-cheesy oats, it's going to be a new staple for me.
Creamy Cheesy Oats:
Add spinach and scallions to your heated pan, stir occasionally, I lightly salt them. Add cheeses and water to your oats, season with salt, pepper, paprika and red pepper flakes. Microwave oats 1 minute, stir and microwave 1 more minute. While oats are cooking whip up your egg and egg whites, season same as oats. Add cooked greens to your finished oats. Scramble eggs in your pan and add the bowl. Done!
Meal 1: old fashioned oats, baby spinach, scallions, fat free cheddar, fat free Velveeta slice, neufchatel cheese, egg, egg whites.
Meal 2: pistachios, green grapes, tangerine. I also have collagen powder and oats milk with coffee at this time.
Meal 4: fat free Greek yogurt mixed with s'mores flavored whey protein, 3 chocolate rice cakes.
Meal 5: pan seared marinated and chopped chicken breasts, steamed green beans, mashed potatoes, fat free cheddar, I Can't Believe It's Not Butter- light, fat free Greek yogurt, scallions.

What is that app you’re using in the 4th picture?
I hate the texture of oatmeal, but this cheesy creation you’ve got going is quite tempting. Plus, I love spinach. I might have to give it a go next time I have leftover spinach. The rest of the ingredients I pretty much always have around.
(I do like the flavor of oatmeal and how full it makes me feel. I always have baked oatmeal cups in the freezer, and I love granola in my Greek yogurt.)
