I used to call “ramen” noodle in soup, but that was before. I got plenty of crazy ideas, but the first step must be simple, thx to the book. Particularity, i used shallot instead of green onion because I can’t get my hand on green onion where i live.
– shoyu tare – veggie chintan broth – manitoba flour noodles 36% – shallot oil – toppings egg, roasted tomatoes, shallot, wakame and something i don’t find the traduction
I got room to improve, the eggs were tinier than my usual ones, i got to try sodium carbonate for the noodles, etc.
