Where has this amazing cut been all my life?

Cooked on the WW Pro 24 for about 2 hours. Rested 30 minutes then reverse seared on the Blackstone.

Made 2 of them. Wife and MIL require well done++. Rest of the family eats it the right way. Although even the well done was delicious and juicy.

    Looks good. Remember it has 2 different running grains, slice against the grain when you get to the more flat ended side you rotate.
