One Pot Taco Pasta aka how to get Mexicans and Italians to hate you at the same time

Ingredients (6 servings):
* 1 lbs – Ground beef * 1 – Medium onion, diced * 1 clove – Garlic, minced * 1 (14.5 oz) can – Diced tomatoes, undrained * 1 (15 oz) can – Beans of choice, rinsed and drained * 1 (4.5 oz) can – Chopped green chiles, undrained * 1 C – Beef broth * ½ C – Water * 1 packet – Taco seasoning mix * 16 oz – Uncooked small pasta (such as rotini, shells, or macaroni) * 2 C – Shredded cheddar cheese * ½ C – Fresh cilantro, chopped
Directions:
Heat a large pot over medium heat. Add the ground beef and cook, breaking it up with a spoon, until halfway browned.
Add the diced onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Add the diced tomatoes, beans, green chiles, beef broth, water, and taco seasoning mix. Stir to combine and increase heat to bring to a low boil.
Add the uncooked pasta to the pot and stir to ensure it’s mostly submerged in the liquid. Cover the pot and reduce heat to low. Simmer according to package instructions for the pasta, stirring occasionally, until the pasta is tender and the sauce has thickened somewhat. There will be some liquid left – this is normal.
Once the pasta is cooked, remove from heat and stir in the shredded cheese – this will combine with the remaining liquid to make a thick sauce. Garnish with chopped fresh cilantro (optional) and serve immediately (or in my case, eat it throughout the week).

I’ve done something very similar to this after taco night. It sounds revolting and looks far worse than what you’ve assembled here. My family won’t touch it and I’m glad: more for me.
