    Almost it it confused with baking soda that is used to velvet meat for stir fry.

    Mix it into breading too 50/50 with any kosher salt you’d be using. Browns and crisps up beautifully

    Should try baking soda instead. Raises the ph and gets even crispier. B soda crisps and b powder makes things “fluffier”

    Honestly, if f you’re not gonna wash em, corn starch is the way to go. I just did thighs with 3 tbl soy sauce, 3 tbl balsamic vinegar and 3 tsp of corn starch marinade. Grilled perfection.

    Corn starch is even better. And dry them overnight in the fridge. You’ll thank me.

    Cornstarch works really well. Will make the skin crunchy as a potato chip.

    Yes. Just use the non-aluminum stuff so it doesn’t taste metallic.
