Bright, fresh, and flavorful, this Citrus & Herb Salmon is a perfect healthy meal. Pair it with roasted beet pasta, kale couscous salad, or honey mustard roasted potatoes for a complete feast!

Ingredients:
1.5-2 lbs salmon
Salt & pepper
1/2 orange, thinly sliced
1/2 blood orange, thinly sliced
1/2 lemon, thinly sliced
1/2 lime, thinly sliced
Citrus Herb Marinade:
2 tbsp dijon mustard
2 tbsp olive oil
1 tbsp maple syrup
1 tsp orange zest
1 tsp lemon zest
2 cloves garlic, crushed
3 tbsp fresh parsley, chopped
3 tbsp fresh dill, chopped
Salt & pepper to taste
Instructions:
Preheat Oven: Set to 375°F (190°C).
Season Salmon: Sprinkle salmon with salt and pepper.
Prepare Marinade: In a bowl, mix dijon mustard, olive oil, maple syrup, orange zest, lemon zest, crushed garlic, chopped parsley, dill, salt, and pepper to form a paste.
Layer Citrus: Place slices of orange, blood orange, lemon, and lime underneath and on top of the salmon.
Bake: Bake salmon for 18-20 minutes, depending on thickness.
Finish: Top with fresh lemon juice and chopped parsley before serving.
