Hi all,

This is such a great page with wonderful resources and insights. Hoping to leverage that for a question I have on Made In cookware carbon steel. I have a pan that has been turning some strange colors lately (when I bought it, it was basically fully black). Wondering if I’m cleaning / caring for it incorrectly. Does anyone know what’s going on here ?

    Original seasoning is completely gone and you’re seeing the gray steel. And some mineral deposits, it looks like…

    You are going to need to reseason the pan. [Here](https://www.youtube.com/watch?v=lzZES7Cy0zc&t=572s) is a video, but there are a bunch of others on Youtube.

    What I do to maintain it is this. In a drawer next to the stove I keep an old plastic deli container with washcloth rolled up in it. After I wash the pan it goes back on the stove. I heat it to evaporate any leftover water and then put a few drops of peanut oil in the pan. I rub around the oil with the washcloth and heat until it just starts to smoke. Then turn off the stove and its ready to use next time.

    When washing don’t use the dishwasher and be gentle with scrubbing. I know its hard to get stuck on bits. They make chain mail scrubbers that will not scratch your seasoning but will pull off the bits.
