I keep forgetting to take the picture before I start eating 😅 but this made 4 big cakes before I started devouring them.
Anyways, it's almost that time of year so I thought I would share the pumpkin pancakes recipe I've been tweeking! I've been working on getting enough flour that it's still a pancake and not an egg monstrosity and I think I've got it.
Pumpkin pancakes:
118g egg whites (½ cup)
227g canned pumpkin (1 cup)
110g cashew milk (½ cup)
38+38g flour (76g, ⅔ cup)
1 teaspoon baking powder
Pinch of salt
1 tablespoon sucralose for sugar free (add 42calories if 1 tablespoon brown sugar)
Cinnamon ginger nutmeg clove and vanilla to taste
431 calories for the whole batch with about 20g protein
