INGREDIENTS:
– 4 cups chicken stock or broth
– 2 cups water
– 1/4 cup butter, unsalted (divided)
– Oil (plus more for drizzling)
– 1 yellow onion, finely chopped
– 1/2 cup carrots, chopped
– 1/2 cup celery, chopped
– 2-3 garlic cloves, minced
– 1 1/2 cups arborio rice, uncooked
– 3/4 cup white cooking wine
– 1 1/2 cups Parmesan cheese (plus more for garnish; optional)
– 2-3 handfuls fresh baby spinach (about 3 cups)
