    Your the second paella post in a row that did direct heat. I’ve always used the deflectors and done indirect. Turns out good but I’m worried about burning the bottom.

    Can you post your process and temp goal/time

    Is there a benefit to do this in a kamadoe rather than a stove-top? Or is it just to keep the smell outside??
