I wanted to share my copycat keto dolma recipe with you. Dolma (stuffed bell peppers) is a traditional Turkish dish typically made with rice, with or without meat. However, I created a keto version using cauliflower rice.
Traditionally, Turks add ground beef or sautéed beef to the filling, or they prepare it without meat, using only olive oil, which elevates the dish to the next level. If you make it without meat, I highly recommend saving some for the next day, as anything with olive oil tastes even better after resting.
Since I’m a bit tired of eating meat, I decided to add olives for a touch of saltiness and feta cheese for richness. I also included tomatoes, which are a traditional ingredient.
I served it with yogurt, which is a must.
Here’s how you can make it: In a pot, partially cook the cauliflower rice and salt it well. In a bowl, chop some tomatoes, olives (a great way to add healthy fats), and feta cheese. Season with your favorite spices—oregano, black pepper, paprika, and Aleppo pepper work great.
Cut the tops off the bell peppers, clean out the insides, and stuff them with your mixture. Keep the tops and cover the stuffed peppers with them.
In a small bowl, mix tomato paste, olive oil, and some water (you can use bone broth instead if you prefer) and drizzle this mixture over the peppers. Cover the pan and cook until the peppers are fork-tender, approximately 40 minutes.

Thank you, this is a good idea. One suggestion: after steaming your cauliflower rice, toss it in a hot dry pan for a few minutes. It will remove some more of the moisture and it improves both the flavor and the texture. It becomes less dense, lighter and more rice-like.
If you take it a step further and begin to brown it, the texture becomes more akin to bulgar. You probably don’t want that for this dish but maybe for a different meal.
