Lentil, Chickpea, Avocado & Goat Cheese Salad
Serves: 4 (6 as a side)

Ingredients:

1 cup French lentils, rinsed
400g can chickpeas, drained & rinsed
5 baby cucumbers, sliced into thick strips
1 red capsicum, sliced into thick strips
1 cup cherry tomatoes, halved
6 spring onions, finely sliced
1/2 cup pitted kalamata olives, chopped
1/2 cup mint leaves, chopped
1/2 cup dill, chopped
100g goat cheese, crumbled
1 avocado, sliced
1/2 cup pine nuts, toasted
Sea salt & black pepper
Dressing:

1/4 cup extra virgin olive oil
2 tbsp white wine vinegar
1 tsp Dijon mustard
Juice of 1 lemon
