Loaded Hummus

A delicious hummus loaded with fresh ingredients to serve with pita or pita chips! This recipe is so versatile too. Feel free to load it up with different dips and veggies!

Ingredients
12oz of hummus (store bought or homemade, recipe below)
1 cup chopped cherry tomatoes
1 cup chopped cucumber
1/3 cup shopped olives
1/3 cup crumbled vegan feta
Olive oil
Handful freshly chopped dill

Directions
Spread your hummus onto a platter
Drizzle with olive oil
Top with tomatoes, cucumber and olives
Sprinkle with crumbled feta
Top with fresh dill
Serve immediately with pita chips or pita bread

Hummus recipe
Ingredients
15oz canned chickpeas, drained
1/4 cup lemon juice
1/4 cup tahini
1 garlic clove, minced
2 tbsps olive oil
2-3 tbsps water
Pinch of salt

Directions
To a food processor add your tahini and lemon juice
Mix until whipped/creamy
Add your olive oil, lemon juice and half your chickpeas
Blend until creamy
Add in remaining chickpeas and water
Blend until creamy
Season with salt and blend until desired consistency
Adding more salt if needed
Refrigerate for at least 1 hour
