Mayo, despite being a complex flavor, is one-note in the context of grilled cheese, as it gives everything that undeniable mayo taste.

How’s this even a debate if anyone saying mayo is getting downvoted to oblivion? I prefer mayo though but depends on the cheese being used. Mayo makes it “tangier” but butter is more neutral.

If it weren’t for this sub, I wouldn’t even know mayo was an option. Been eating grilled cheeses my whole life and I have never seen or heard anyone talk about using mayo instead of butter.

Mayo is easier if you refrigerate your butter (like many in the U.S. do), especially if you have kids and are trying to make lunch quickly. But butter tastes way, way better.
