A whole pound of shrimp is only 240 calories. Plus 2 tomatoes, 1/2 small onion, 1/2 cucumber, 1/2 bell pepper, 1 habanero, 2c cilantro and lime juice. Total 380 calories for a huge bowl. Perfect summer meal. I ate half of it with a few tortilla chips. (Not true ceviche because I parboiled the shrimp).
