    β€’ 2 cups dried maize kernels (or use canned if in a hurry)
    β€’ 2 cups dried red kidney beans (or any other beans, or use canned)
    β€’ 1 large onion, chopped
    β€’ 2 tomatoes, chopped
    β€’ 1 carrot, diced
    β€’ 1 bell pepper, diced
    β€’ 2 cloves garlic, minced
    β€’ 1-inch piece of ginger, minced (optional)
    β€’ 1 tablespoon vegetable oil
    β€’ 1/2 teaspoon turmeric powder (optional)
    β€’ 1/2 teaspoon paprika or chili powder (optional, for spice)
    β€’ Salt to taste
    β€’ Fresh coriander leaves for garnish
    β€’ Water for boiling

    Instructions:

    1. Soak the Maize and Beans: If using dried maize and beans, soak them separately in water overnight. This reduces cooking time and ensures even cooking.
    2. Boil the Maize and Beans: Drain the soaked maize and beans, then add them to a large pot. Cover with fresh water and bring to a boil. Cook on medium heat for about 1-2 hours, or until both the maize and beans are tender. (If using a pressure cooker, this can be done in about 30-45 minutes.) Drain and set aside.
    3. Prepare the Vegetables:
    β€’ In a large pan, heat the vegetable oil over medium heat.
    β€’ Add the chopped onions and sautΓ© until soft and golden brown.
    β€’ Add the minced garlic and ginger (if using), and sautΓ© for another minute until fragrant.
    4. Add the Tomatoes and Spices:
    β€’ Stir in the chopped tomatoes and cook until they break down and form a thick sauce.
    β€’ Add turmeric powder, paprika or chili powder, and salt. Mix well.
    5. Combine with Maize and Beans:
    β€’ Add the cooked maize and beans to the pan with the tomato mixture.
    β€’ Stir to combine, ensuring the maize and beans are evenly coated with the sauce.
    β€’ Add the diced carrots and bell pepper. Cover and let it simmer for 10-15 minutes, stirring occasionally. Add a little water if needed to prevent sticking and to help cook the vegetables.
    6. Garnish and Serve:
    β€’ Once the vegetables are tender and everything is well mixed, remove from heat.
    β€’ Garnish with fresh coriander leaves.
    β€’ Serve hot, either on its own or with a side of chapati, rice, or ugali.
