Overall they were vastly superior to the last attempt. The shells, while some were hollow and/or cracked, were closer to macaron shells and they tasted great. Vanilla shells with a chocolate ganache filling.

    How’d you make your ganache? It looks very grainy. I make a super simple ganache recipe that comes out perfect every time. I use half a bag of Ghirardelli semi sweet chocolate chips (you can use any brand/flavor) and heat a cup of heavy cream til before it boils and just pour it over the chips and whisk it in til smooth. As it cools it’ll thicken and I pipe it onto the cookies

    Good effort. I’m gonna guess your batter was too thick causing the cracking, don’t be afraid to stir it a bit so you can get ribbons of batter. It’s a delicate balance though, you can’t over stir either. Using a template will vastly increase the appearance and evenness of the cookies.

    Something seems a bit off on the shell besides the cracking. Would you mind sharing the recipe you used?
