Grilled a whole striped bass, some marinated chicken, corn, peppers, and zucchini from the garden.
Built by Double Take Fabrications in Abington, Massachusetts. We worked together on the design.
Going to take a little while to get fire management down. It’s a big area so need a ton of coals to get the whole thing operable. I let the fire burn for about an hour before I started cooking the fish. The fish was quite easy because it’s so delicate. Didn’t need a ton of heat.
Looking forward to having a full day to work with it – get the fire really going – hang some chickens and sausages etc. .
The key is – it was super fun and will only get better!
Certainly open to any tips and tricks!

Having lived and learned to weld in Santa Maria I would call that more of an Argentinian style not really Santa Maria style at least not traditional. And for over 2k the thing should be made out of stainless steel.

Ditch that chain and use steel cable. You don’t want to be clunking along linl by link.
