Trying to use up all the produce in my fridge before I travel, so here’s another one pot recipe!
Today, I’m making **Ishikari Nabe (石狩鍋)**, a traditional hot pot from Hokkaido with origins in Ishikari Town, known for its abundant salmon at the mouth of the Ishikari River. Read more about it [here](https://www.maff.go.jp/e/policies/market/k_ryouri/search_menu/565/)!
This dish, originally created by local fishermen, is renowned for its rich and buttery broth, which marries the flavors of salmon, miso, and kelp. What sets it apart from most other nabemono is the addition of butter, adding an unexpected but delicious depth to the dish. Keen eyes might notice I’m using two different types of miso – I’ve opted for a regular 1yr aged miso (salty!) blended with a barley miso (sweet!) to pair better with the overall sweet buttery taste of the soup.
This is a little heavy on the caloric content but I was eating it after a massive gym session and needed the energy. This one dish alone accounted for more than half of my daily protein intake!
