if it helps, a recipe book had a section on weird flavors, including one that was filled with smoked salmon (like as a slice, not ground up, that sounds gross)

What are things that you like? Spices you enjoy/want to try? I love Earl grey, which pairs well with chocolate, citrus etc but is a relatively mild flavor – would not pair well with a super punchy curd or something. So I did a relatively mild grapefruit buttercream with dehydrated grapefruit and an Earl grey cremeux. I wanted to try tonka after seeing it on Bake Off, paired with cardamom. Not my favorite, but glad I tried it. What might that look like for you? It might help to make a list, think of how to pair different things on the list.
Other example – the blog Ice Cream Science did a recipe for chocolate blue cheese ice cream. Apparently ketones in the cheese are supposed to pair with the chocolate. I tried, it was interesting and good but not my favorite, something like that could be something out of the box to try.
Also could think of themes. I wanted to make an opera cake based on an opera, so I chose Akhnaten and made it with flavors of ancient Egypt – honey, pomegranate, watermelon, date. What are themes of interest to you?
