Hey all! I'm wondering time/temp and usage suggestions for a 12.5 lb sirloin tip roast from Costco! Was thinking cheesesteaks and other sandwhich creations. Any other ideas?
I've seen 125 for 18-36 hours a lot, but wasn't sure what time is actually necessary.

    137 and send it, probably 8-12 hours just eyeballing it.

    That’s going to make a ton of sandwiches.. my family is too small so this would be portioned into at least 6 different meals lol

    I like 137F to render the fat. I’ve tried various timings it’s way too chewy at 12H, 18H is okayish, but 24H is where it starts getting nice. I didn’t notice much difference with 26H.
