I'm from NE India and we love our Bhoot Jolokia (Ghost Chillies). They are made into paste, sauces, pickles, powder, flakes, smoked flakes etc. They problem is that after harvesting they don't last long, unless you freeze them. The only other way to preserve them is to process them, so that you can enjoy them the whole year round.
