Sugar free as well! Would love some recommendations for what to add to this (no sugar/sweetener)

Rice noodles (that I rinsed in cold water then tossed in a bit of toasted sesame oil (to prevent from clumping, it worked!) then cooked in warm water
Extra firm tofu, cubed
Diced carrots
Diced sugar snap peas
Broccoli (I used frozen)
Green onion

All mixed up in a peanut sauce with:

Natural peanut butter
Tamari
Rice vinegar
Grated ginger
Garlic powder
A little bit of warm water

Really good, but I’d suggest adding maple syrup or honey to the sauce. I’m trying to go for less sweet/sugars,sweeteners etc right now but it definitely is more bland without it.

Great for meal prep, tastes good hot, warm, or cold.

    I love dishes like this! I make something similar, but I prefer the tofu crispy. Instead of cooking the tofu in water, you could coat it in cornstarch, salt, pepper, garlic powder, and a bit of oil, and then bake at 400 until it looks crispy. It might add some pizazz without sweetener. 🙂

    Sugar free maybe, but so high in carbs it doesn’t really matter.
