Just a simple ingredient prep to stay on track this week.

    – Two ramekins of mini green bean casserole (no fried onion on them yet, don’t want it to get soggy). Roughly one can of French green beans, 2/3 can of cream of mushroom, and spices split between the two. It’s too hot to use my oven, but I can put these in the air fryer.

    – Hard boiled eggs.

    – Half of a cabbage cut in chunks. Other half got sliced thin and thrown in the freezer to add to ramen and soups.

    – Raw sweet potato chunks.

    – One packet of sugar free peach jello and four diced peaches, split into four servings that’ll be topped with cool whip.

    In the freezer is thin pork chops and a couple chicken tenderloins. Also have squash and asparagus in the fridge.

    All of this helps me easily come home after a long day of working in higher ed in the month of August and be able to toss a low cal, high nutrient, high protein mix into the air fryer and call it good. This is my first time trying the mini green bean casserole idea but I don’t see why it won’t turn out fine, and I like that it’ll hit that comfort food craving.
