Ive worked a ton this week and honestly need something i can put in the instapot tonight, i dont have a day off for a few more days. It can either be pressure cooked or slow cooked overnight. I only ask vegan because i dont eat meat and have a dairy allergy. Other than that, we are good.

It saved me at the end of my work streak. I currently have chili going. It has cooled outside a bit for me, so I'm going to enjoy eating this outside on my breaks! (Along with homemade foccacia)

Instant pot is often do a batch of beans and then separately a batch of potatoes then mix and match with different veggies and sauces or condiments

I like her tofu and green beans Asian style dish for slow cooker. I found it in her “Vegan slow cooking for two or just you” book. It might be o her website via search. Keep in mind that it is not overnight but could be done in 2-4 hours in slow cooker this freeing you up to do more interesting things than babysit a cooktop.
If you are a small household, love slow cooking and are cooking lots of vegan, I highly recommend get that For Two book. It’s an invaluable resource.

This [Beefless Stew](https://www.drmcdougall.com/recipes/beefless-stew/) is so good! To adjust to the IP I would follow the steps using the sauté setting to start & then the rest cooking for 8 minutes at high pressure. Do a pressure release, stir in thawed peas, & put the lid back on so they can get hot for a few minutes.
I make large pots of chili beans, then add some extras in the bowl when I eat them. Chopped celery, avocado, black olives. Fresh tomato pieces. Mushrooms. Many foods go with chili beans.
