The toppings you have look fine, corn & red onion aren’t my favorite but if you like them then feel free to keep using them.
The bowl does look a bit crowded, so perhaps you need a different bowl or to cut back on some of the toppings. Oftentimes less is more.

That actually looks great, the only thing I can think of to critique is that maybe the toppings don’t really…blend? I’m not sure how to phrase it, but it looks a bit like food prep. Like, almost too organized. But very pleasant.

Halved cherry tomatoes fried in sesame oil. That pop of red visually and the extra umami adds so much.

if you use roasted black sesame seed it will dye your egg and you can make designs with the seeds

I think a finer mince on the red onion helps them blend with the bowl without standing out as a texture

Maybe throw in some Enoki mushrooms (or mushrooms in general, Nori, fish cake if you can find it, maybe try marinating your hard boil egg in soy sauce (shoyu tamago), I also like some fresh chili sometimes or some tofu. Otherwise looks great.

I had Ramen with toasted Brussels sprouts and they were fantastic

Check out the little cans and jars of stir fry ingredients in your local supermarket’s Asian foods aisle. Bamboo shoots, enoki mushrooms, mini corns, etc.
Also, nori (seaweed) sheets. And tinned oysters and squid can be nice adds, too.
