Family favorite (kids love this too).
Salmon: I lay the filet skin side up on a cooling rack balanced over the sink. Then pour boiling water over it to be able to peel it off. Dice salmon, toss in some hot honey, soy sauce, and garlic. Bake for 8-10 mins at 400.
I make our spicy mayo: just whatever mayo you want and as much sriracha mixed in as you want. Literally tastes the same as the store bought.

This looks so delicious!! Might I suggest you check out [Shichimi Togarishi](https://en.wikipedia.org/wiki/Shichimi)? It translates to seven flavored spice. I find that it goes very well with salmon / tuna / etc poke bowls.
