Put the bulgur in a large bowl and pour spring water over it. Mix and wait for 5-10 minutes for the bulgur to pull out all the water and piss. Make sure that the bulgur is not wet and that it has drawn off this water. The amount of bulgur will double when the water is removed.
Meanwhile, fry the olive oil and onions in a frying pan over medium heat. Then add the tomato paste and salt and fry for another 1-2 minutes. Add this onion mixture to the cooked bulgur and use your hands to thoroughly feed the onion mixture to the bulgur. Then add cumin, mint and lemon juice and mix and wait for it to cool down a little.
Finally, add the tomatoes, cucumbers, lettuce/kiwi, dill/parsley and green onions and mix them all together.
You can serve it partially with lettuce or kiwi leaves. It also goes well with kisir, cucumber or hot pepper marinade and buttermilk.
