    1/1 To salute u/Pkonko37 on his most marvellous quest, I decided to be a little daring and try something slightly outrageous tonight. Two different 3-cheese sandwiches. And I have to say they’re the best grilled cheese sandwiches I’ve ever made – thanks to inspiration from u/Pkonko37.

    Sandwich #1: Talbot Forest Cheese Co. Havarti, Meyer Cheese Tasty Gouda (a gold medal winner in the “NZ Champions of Cheese Awards 2024”), and Rolling Meadow Mozzarella on Ploughmans Bakery Southern Seeds 45% lower carb bread (soft and pillowy). And lashings of New Zealand grass-fed butter.

    Sandwich #2: Talbot Forest Havarti, Rolling Meadow Mozzarella and Mainland Special Reserve Chilli & Garlic Brie on the same Southern Seeds bread with lashings of butter.

    About the ingredients…

    Talbot Forest Havarti is described on the label as “creamy and sweet”. I found it to be soft, mild, creamy, and ever so slightly sweet. An absolute stunner of a cheese.

    Meyer Cheese Tasty Gouda is described on the label as “full bodied”. And by God it is. Its flavour is akin to what I imagine American’s sharp or extra-sharp cheddar might taste like.

    Rolling Meadow Mozzarella is purely there for the melt and the stretch! It’s described on the label as “mild & soft with the perfect melt & gooey stretch”.

    Mainland Special Reserve Chilli & Garlic Brie is one of my favourites. I eat it on seed crackers with chorizo and it’s the bomb.

    Ploughmans Bakery Southern Seeds 45% lower carb bread: I’ve never had this before. I went with a lower-carb bread because I’m on a low-carb diet. I almost chose a sprouted seeds bread, but it was quite dense, whereas the Southern Seeds loaf is soft and pillowy. It was a good choice; I loved it.

    Butter: New Zealand cows are pasture-raised so all butter here is grass-fed. Our grazed pastures create more organic matter and carbon content in the soil than cultivated fields. We have low use of antibiotics, and some of the lowest somatic cell counts in the world. None of our cows are given hormones to produce extra milk. Compared to housed animal systems, grass-fed dairy farming is less impactful on our planet’s resources. You can actually see the ‘goodness’ in our yellow butter.

    3. First side in the pan and beginning to melt.

    4. Sandwich #1 plated up. The crispy cheese around the top edge is the Gouda, and the gooey stuff is partly Harvarti and mostly Mozzarella.

    5. Fantastic melt and decent enough stretch.

    The Tasty Gouda flavour really came through. I loved this GC. The Southern Seeds bread was perfect – great texture and flavour, but not so strong that it distracted from the cheese. IMHO I rate this 10/10.

    After devouring sandwich #1 I was ready to tackle sandwich #2.

    7. In the pan and ready to grill. Mmmm, I hope I haven’t gone overboard with the garlic & chilli brie.

    8. Just before the flip. Dear God, is there any bread in that swimming pool of cheese? It looks more like a fondue!

    10. Plated up. The top bit of bread, which was on the bottom for the second half of the cook, didn’t want to come out of the pan. A bit of a mess but thar she is!

    11. That melt! Heaps of melt and a wee bit of stretch too.

    12. Half way through and I’m beginning to struggle!

    This sandwich was interesting. The first flavour hit was just the bread and mild, creamy cheese. I was wondering where the chilli was, and then it started to take over. The chilli hit that developed was incredible. I overdid it on the amount of cheese though and felt slightly queasy afterwards. Overall, I’d give this one 8/10.

    I salute you r/Pkonko37, you have been an absolute inspiration and led to this sub becoming a really friendly place where we all indulge in our common passion. Grilled cheese for the win! 🧀❤️❤️❤️
