I’m making the galbi short ribs tomorrow and I’m having a tough time finding a side dish to pair with them. I’ve found a nice simple Korean salad but I’m really craving some good noodles. I saw a black bean noodle (Jjajangmyeon) recipe that peaked my interest but it seems a tad heavy to pair with the ribs.

They’re usually eaten with rice. Rice, some kimchi, and your salad would make good sides, imo.
If you want noodles, Naeng-myun (Cold noodles) would be the classic noodle pairing with Galbi for Koreans
Make [Ssamjang](https://www.maangchi.com/recipe/ssamjang) and lettuce, add rice and wrap!
It’s not a Serious Eats recipe, but we do grilled cabbage with this spicy cilantro lime sauce every time we do korean short ribs. It’s fantastic. Make extra sauce, it goes well on lots of stuff!

Japchae is simple – can be pretty light
Funny. This is my dinner this Thursday. Having rice, pa-kimchi, and sigeumchi-namul as sides.
No noodle ideas unfortunately.
I’d make a nice cucumber salad
Banchan buffet! Radish kimchi, sauteed soy bean sprouts, [spinach banchan](https://www.seriouseats.com/korean-marinated-spinach-banchan-sigeumchi-namul), cucumber salad. If you have a Korean market nearby, they sell all these things in small servings so you don’t have to make them all.
Rice is also requisite on the side.

I really like kimchi with galbi. – which you can buy from any Asian market
doenjang jigae or
kimchi jigae
Basically any simple Korean soup. Plus rice and banchan
Potato Salad, white rice, cabbage slaw
Banchan. Rice. Lettuce for wraps

I like a little dish of grated Asian pear
