I’m on a lifestyle change and living with a total foodie, so eating within a calorie deficit while still making food he will enjoy has been really challenging. I’m also a total volume eater, so I don’t want a few calorie-bursting bites…I want to feel full when I’m done eating.
Bursting with flavor & well-balanced from the watermelon and cucumber, you could also throw this on a bed of lettuce for more volume, but I’ve been eating below and it’s been lovely:
All calories are assigned by MyFitnessPal
•Watermelon, cubed, 2 cups – 93 cal
•Cherry tomatoes, halved, 8 oz – 41 cal (please note, I used a tomato from my garden above, but I used cherry in the ingredients since it could be standardized, use whatever you have!)
•Persian cucumber, diced, one count – 18 cal
•Zest and juice of 1/2 lemon, approx 3/4 oz, 7 cal
•Fresh basil & mint leaves, about 4 each, calories approx 4
•Extra Virgin Olive Oil, 3/4 tsp, 35 cal
•pinch of flakey salt & pepper
Assemble veggies & fruit in a bowl, top with shredded or chopped herbs, lemon zest, lemon juice, and drizzle of olive oil. Salt and pepper to your taste. Enjoy!
