Welcome to the second part of the Neapolitan-style Pizza making. Today we will deep fry the entire pizza disc, and create a tasteful combination of toppings to form a mouthwatering Deep Fried Pizza. In Naples, these are called “Montanara”, a deep-fried pizza. Here I call it an MZK specialty, and it’s seriously a treat, to really have it once in a while. My dough is 75% hydrated making it super light, with the help of my new yeast Angel Instant Dry, I was able to achieve the perfect fluffy yet crispy crust.

Ingredients:

560 g 00 Flour
420 g Water
1 g Angel Yeast Instant Dry
17 g Salt
