Moved house half a year ago and somehow my usual recipe(italian) didn’t give me good results anymore. I also tried a French method, but that was even worse. Now i followed the video of Pastry Living and finally have some feet again. I think i underbaked them, but the tops were already turning brown a bit, 150c, 14 minutes, lowest rack of convection oven.
Also, no rest, as the video deemed it not necessary.
What could i improve upon?
