Had a go at baked protein oats for the first time. Made a really nice change from normal porridge. It was crispy on top but light and fluffy on the inside. Also had it with some butternut squash. For the macros (last slide) felt like a decent amount of food for sure!

I made a few adjustments however, as the recipe given makes 4 servings using 2 scoops of protein powder, but I wanted just a single serving with a full scoop of protein powder. I ended up adding an extra 30g egg whites to keep the mixture the right consistency. I also replaced some of the milk with sugar free syrup. I think in future I'll try jazzing it up by maybe adding some mixins like berries or banana, but even relatively plain I found it really nice.

Ingredients:
50g rolled oats
30g soy vanilla protein powder
1 teaspoon cinnamon
60g liquid egg whites from a carton (roughly 2 large egg whites)
2g (1/2 teaspoon) baking powder
67g 0 fat greek yoghurt
30ml semi skimmed milk (can sub for any milk or milk substitute)
30ml sugar free syrup (for extra sweetness, but can replace with equivalent amount of milk).
1/4 teaspoon salt.
