For the next two months, the apple trees are going to be producing like crazy, and my wife will be baking all manner of apple goodies. Not wanting to be left out, I decided to create a faux apple pie filling that could be used in a number of different keto friendly deserts.

Our apple pies generally don't include cinnamon which does a lot of the heavy lifting here, and allulose has to be imported😢. I'd have to rely on lemon and a really good fake apple flavouring

My mom first was introduced to mock apple pie back when she and my dad has a mini farm in Pennsylvania … all the neighbors had a specialty fruit and vegetable… Ma grew amazing tomatoes and squashes… this was a staple for that bumper crop of zucchini… I guess back in the mid seventies we first had it… a favorite ever since!

Using an egg white wraps to make Apple “empanadas” would be great!! put filling on 1/2 of the circle brush egg white on the edge to seal press down with a fork & voilà! Almost like an apple ‘hand pie’ you can fry !

I just made something similar a few days ago with blueberries mixed in and a batter topping using Victoria's keto flour blend – it does come out like apple! Also zucchini roll-ups, lasagna, pickles, pizza bites, stir-fries, turnovers (the apple thing again)…battling a full-on squash explosion! I see zucchini pineapple is a thing but haven't tried it yet – maybe going to try to make a zucchini Waldorf salad next.

I've made this before with Lakanto erythritol+monkfruit a while ago, and while allulose is absolutely the way to go, it will worked wonderfully.
