
Ingredients you'll need:
- Almond flour: 2 cups
- Baking powder: 1 teaspoon
- Salt: 1/2 teaspoon
- Eggs: 4 large
- Greek yogurt: 1/4 cup
- Olive oil: 2 tablespoons
- Honey or maple syrup (optional): 1 tablespoon
- Apple cider vinegar: 1 tablespoon
- Poppy seeds or sesame seeds (optional, for topping): 1 tablespoon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with olive oil or line it with parchment paper.
- In a large bowl, whisk together almond flour, baking powder, and salt until well combined.
- In another bowl, beat the eggs until frothy. Add Greek yogurt, olive oil, honey or maple syrup (if using), and apple cider vinegar. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Transfer the batter to the prepared loaf pan, spreading it evenly with a spatula.
- Sprinkle poppy seeds or sesame seeds on top of the batter, if desired.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the bread to cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
