I mix my juice into tuna and eat it with crackers or tortilla chips! or mix a little in with mayo on sandwiches.

Drink it. Add a splash at the end of making soup. Drink it. Add it to salad dressings. Drink it. Pickle eggs in it. Drink it. Pour it into your pickle jars that are low from drinking the juice. Or you could drink it.

Use it to make salad dressing or in tuna sandwich like you said

I used to work at a Mexican restaurant that had sautéed greens (kale, chard, escarole) with garlic and onion and finished it with the pickled onion juice. It was delicious!

You could make a killer salad dressing/vinaigrette with it by just adding some olive oil, Dijon mustard, some herbs, touch of honey, etc.

Or just use it you’d use it in any recipe that calls for a splash of vinegar/citrus juice for some extra added onion flavor.

It’s a great ingredient for a killer burger sauce. Just add a splash to your favourite recipe.

Classic way would be mayo+mustard+ketchup+pickled onion juice, but you can accomplish amazing things by playing around with spiced ketchup, chili mayo, hot sauces, worcester sauce, even adding finely diced onions again and spice that up with your juice.
I guess you can also freeze it as ice cubes for future use.
