    This post made me think…you could put the loaf in a bread pan before you bag it. It should cook the same and would give it an actual shape.

    Best part of the meatloaf is the brown sugar, garlic, Worcestershire, and ketchup sauce I put on it that slowly caramelizes over the course of the cook

    I did a sous vide meatloaf and it was delicious. Definitely sauce and broiled it at the end.

    I like to freeze it in a loaf pan then pop it out, vac bag, then cook. It holds it shape well.

    When I did sous vide meat loaf – I froze it first – so it stayed together in the shape I wanted and then as it cooked from the outside in – the cooked outer bit kept the inner bit where I wanted.

    I do sous vide farmhouse pate which looks very similar, I just roll it into a log with plastic wrap and then vac seal it to get a better shape.

    This may sound apocryphal but my preferred method for meatloaf is to just steam it, use the liquid as base for glaze, and finish in broiler. Easier then stuffing the mess into a bag and steam is gentle enough to retain the moisture and flavor without that weird mushy texture.
