    How was it? I just smoked one today until it hit 120. I’m debating whether I should do like an hour at 125 SV tomorrow or just sear it.

    I honestly would’ve preferred to do 120° or so, but my wife prefers more medium. Still very tender and the sear was great! Used spg and Montreal steak. Hard to go wrong with tenderloin.
