Hi! I found this recipe for breakfast cookies and I love them. I've been eating a couple for breakfast along with a protein shake. I had to modify it a little bit because I didn't have every kind of seed they wanted but they came out well. I also used all purpose flour not Almond flour because for some reason Almond flour never comes out well for me, it also always tastes bitter to me. Might be the brand I use.

I am looking to lower the carb count, and ideally raise the protein without raising fat too much. I want to keep all the mix ins so the obvious choice to me is replacing the flour with protein powder. I have both traditional protein shake powder and plan brown rice protein powder, which would you suggest and how much can I replace? Also interested in cheaper alternatives that are minimally processed for the maple syrup, a might also be able to lower that if I use the protein shake powder since it's sweetened. Open to any suggestions really, except fully replacing the sugar with any artificial sweeteners, partial is possible except monk fruit. Also interested in any "superfood" type mixins, I am trying to fill some nutritional gaps with these cookies (specifically omega 3s) so not opposed to some additions.

Thanks!

Replace the all purpose flour with almond and coconut flour and a Tbsp or two of whey protein powder (standard “keto” baking practice). Using seeds will help with the omegas you want. But, I’m sorry to say the rolled oats and those dried cranberries are not at all “keto friendly. ” If you’re looking to lower the carb count those are the two biggest offenders in this recipe.

From a low carb/keto standpoint these cookies are not it friend.

You might take a look at Carbquik. That stuff has been excellent for enabling biscuits, pancakes, etc for us while on keto.
