Hi there!
I'm wondering if anyone has used the cheese sauce recipe as a base for a smoked queso?
My plan is to make the sauce, grill up peppers and onions, fry up chorizo, mix them all together in the cast iron,and then throw it in the treager to smoke few a few hours.
Anyone have experience doing something similar? Do you foresee any issues with this plan?

I think the easier route is to buy smoked cheese to use in the recipe.
Best to smoke each thing then mix it up
