This is a variation of that "marry me orzo" that seems to be everywhere on the internet 😄 I'm not that fond of sundried tomatoes (it's a texture thing…), so I replace it with other veggies. Honestly, it takes less than an hour to make and it's perfect for meal prep!
This makes 3 generous (or 4 smaller) portions. It's around 614 cal per serving if you make 3 servings (depending on your ingredients of course).
- 1 cup of orzo (dry)
- 1 chicken breast (250 grams)
- 1 onion
- 2 cups of chicken broth (I used water and a chicken stock cube instead)
- 1 tbsp of tomato paste
- 2/3 cup of cream cheese
- 1,5 cups of canned peas and carrots
- 1,5 cups of spinach (I used frozen spinach, but I've made it with fresh spinach before)
- 1 tbsp of olive oil
- 2 tbsp of cajun seasoning (I made my own using this recipe: https://www.gimmesomeoven.com/cajun-seasoning/)
- Salt

Looks very tasty. The only thing missing is the splatter of sauce all around the hob and walls. Or is that just my poor stirring skills
