At grocery the other day, I caught a batch of eggs at 60% off, sell by date was coming up.

Also had the same situation on Italian sausage!

So….

Crack the eggs, 3 dozen. Add salt, pepper, milk, and a splash of water. Scramble up and throw in a bowl.

Three pounds of sweet sausage. Sauté until done, constantly breaking up
Into small chunks while cooking.

Home garden! 3 onions. 3 bell peppers. Chopped and sauté until slightly softened.

Bowl of cheese shreds, whatever leftovers.

Allow all to cool.

When cool. Pinch portions into tortilla and wrap up. Practice, you’ll get better!

Lay on baking sheet, put the seam on the bottom.
Stack these up and freeze.

When solid, a day for me because I forgot, move into bags.

    Just curious as I want to try this – when you make a batch like this….how is it once you unfreeze it?

    Any tips on storage and reheating? I think I’m most worried about something getting freezer burnt or just being mush once I unthaw it.

    I made a ton of burritos when meal prepping before giving birth. They reheat pretty well! I would highly recommend tightly wrapping them individually in foil, to protect against freezer burn
