The entire thing can be one serving as a meal or a few as a side 🙂
Ingredients:
- 340g frozen Cauliflower rice
- 2 cubes of frozen garlic
- 85g frozen mixed veggies (I used a carrot, peas, corn and green beans blend)
- 1 large egg
- 94g egg beaters/egg whites
- Spices (Salt, onion powder, garlic powder, oregano ect)
- 30g soy sauce
- 6g stevia
Instructions:
- Cook the frozen Cauliflower rice according to package directions.
- In a large frying pan, add the frozen garlic, cooked Cauliflower rice, and frozen mixed veggies. Cook on high heat for around 5 minutes, continually mixing to prevent sticking.
- In a separate bowl, whisk together the egg and egg whites, and season generously.
- Move the Cauliflower and veggie mixture to one side of the pan. Pour the egg mixture into the other side of the pan.
- Lower the flame to medium-low heat. Use a metal spoon to gently scramble the eggs, breaking them up into small pieces as they cook.
- Once the eggs are cooked through, mix them together with the Cauliflower and veggie mixture.
- In a small bowl, mix together the soy sauce and stevia.
- Pour the mixture into the pan and stir to combine with the Cauliflower and egg mixture.
- Cook for an additional minute, stirring constantly.
- Garnish with scallions
