The entire thing can be one serving as a meal or a few as a side 🙂

Ingredients:

  • 340g frozen Cauliflower rice
  • 2 cubes of frozen garlic
  • 85g frozen mixed veggies (I used a carrot, peas, corn and green beans blend)
  • 1 large egg
  • 94g egg beaters/egg whites
  • Spices (Salt, onion powder, garlic powder, oregano ect)
  • 30g soy sauce
  • 6g stevia

Instructions:

  • Cook the frozen Cauliflower rice according to package directions.
  • In a large frying pan, add the frozen garlic, cooked Cauliflower rice, and frozen mixed veggies. Cook on high heat for around 5 minutes, continually mixing to prevent sticking.
  • In a separate bowl, whisk together the egg and egg whites, and season generously.
  • Move the Cauliflower and veggie mixture to one side of the pan. Pour the egg mixture into the other side of the pan.
  • Lower the flame to medium-low heat. Use a metal spoon to gently scramble the eggs, breaking them up into small pieces as they cook.
  • Once the eggs are cooked through, mix them together with the Cauliflower and veggie mixture.
  • In a small bowl, mix together the soy sauce and stevia.
  • Pour the mixture into the pan and stir to combine with the Cauliflower and egg mixture.
  • Cook for an additional minute, stirring constantly.
  • Garnish with scallions
