Do you have the matching sealable lid for that container? Makes a big difference, not only saving a few pennies on energy but especially reducing water evaporation during long cooks.

You need a trivet or you’re risking cracking the granite counter, plus you’ll reduce heat loss significantly. As someone else said you also need a cover, especially for longer cooks or you will eventually have a failed cook due to low water. It’s also a major heat loss, too. Doesn’t that Anova container come with a cover?
